Drying tomatoes with sea salt allows the tomatoes to retain more moisture and color, resulting in a product with much richer flavor and more pleasing texture. Boil or soak in vinegar or water before use. When the dry tomatoes are finely chopped and sprinkled on salad, there is no need to add additional salt to the salad. The Sommariva family was one of the pioneers of the organic movement in ltaly.
